Bruschetta on farmers' market artisan breads, zucchini chowder (so nice with this cool summer we're having), open-faced veggie sandwiches, sides of our own carrots and green beans, and salsa...just a taste of our from-the-garden diet this summer.
What is it about this that is sooooooooooooo satisfying? Perhaps part of it is answered in this quote from Thomas Jefferson, which I read in a wonderful, organic lifestyle magazine Aunt Betty sent me for my birthday: "Agriculture is our wisest pursuit, because it will in the end contribute most to real wealth and happiness."
I definitely feel very happy--and rich!--when Evelyn and Amelia are enthusiastically plucking cherry tomatoes that are almost dripping off the plants, and laughing in wonder at the enormous zucchini that grew while we were at the beach. We had one of them in a casserole last night for dinner. Feelin' happy and rich over here!
